Mouthwatering One Pot Chicken and Rice Dish Recipe

Here's a recipe for a mouthwatering one pot chicken and rice dish:

Ingredients:
- 4 chicken thighs, bone-in and skin-on
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup long-grain rice
- 1 ½ cups chicken broth
- 1 tsp paprika
- ½ tsp dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish

Instructions:
1. Season the chicken thighs with salt, pepper, paprika, and dried thyme.
2. In a large pot, brown the chicken thighs on both sides until golden.
3. Remove the chicken from the pot and set aside.
4. In the same pot, sauté the onion, garlic, and bell pepper until softened.
5. Add the rice and stir to coat it with the vegetable mixture.
6. Pour in the chicken broth and bring it to a boil.
7. Place the chicken thighs back into the pot, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
8. Garnish with chopped parsley before serving.
