Ingredients:
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon dried culinary lavender
- 6 egg yolks
- 1 teaspoon vanilla extract
- Extra sugar for caramelising the top

Instructions:
1. Preheat your oven to 325°F (160°C).
2. In a saucepan, heat the heavy cream, granulated sugar, and dried lavender over medium heat. Stir until the sugar has dissolved and the mixture is hot, but not boiling. Remove from heat and let it steep for 10 minutes.
3. In a separate bowl, whisk the egg yolks until smooth. Slowly pour the lavender-infused cream into the egg yolks, whisking constantly.
4. Stir in the vanilla extract.
5. Strain the mixture through a fine-mesh sieve to remove the lavender.
6. Divide the mixture evenly among ramekins or oven-safe dishes.
7. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
8. Bake for about 30-35 minutes, or until the edges are set but the center is still slightly jiggly.
