Let's face it - November is the time when comfort foods really become necessary. We feel like this yummy, warm recipe is perfect for those rainy November evenings ☺️
5 large or 7 medium cooking apples (depending on the size of your dish)
350g spelt flour (or wholemeal flour)
200g softened butter
100g honey (or agave syrup)
1 tsp cinnamon
1/2 tsp nutmeg
Preheat the oven to Gas Mark
Peel, core and chop the apples into small cubes. Place these in a pan of water as you chop so that they don't spoil. Bring the pan of water to the boil and allow the apples to simmer until they are just soft enough to skewer with a fork. No more than 4 minutes should be sufficient. If you aren't ready to make your crumble yet you can freeze the cooked apples for up to a month for this recipe, just add an extra 15 minutes to your cooking time and place lower in the oven to ensure the top doesn't burn!
Whilst the apples are cooking place the butter and half of the flour in a mixing bowl and combine with a wooden spoon. Add the honey, nutmeg and half of the cinnamon.
Now comes the messy part - a perfect opportunity to get the kids involved. Add the flour gradually to the rest of the mixture and, with clean hands, roughly mix together. The idea is to have the mixture in small, coarse pieces rather than a perfect doughy ball which you should have by the end of adding all the flour.
Drain the now cooked apples and place into a deep oven dish or greased baking tray. Sprinkle over the remainder of the cinnamon and with a large spoon or hands add the crumble mixture to the top, making sure that the apples are well covered.
Place in the oven for 20 minutes. The top of the crumble should be a little hard and slightly browned. Serve with cream, Greek yogurt or your favourite ice cream or enjoy with a cup of tea! Yum!
