Mince Pie Recipe


As Christmas is quickly approaching us, we thought we'd share this yummy mince pie recipe! 
 

Ingredients:

1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup granulated sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
1/2 cup currants
1/4 cup finely chopped walnuts
1/4 cup finely chopped almonds
1/4 cup finely chopped crystallized ginger


FILLING:
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup granulated sugar
1 large egg
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
1/2 cup currants
1/4 cup finely chopped walnuts
1/4 cup finely chopped almonds
1/4 cup finely chopped crystallized ginger
1/4 cup brandy
1/4 cup apple cider


GLAZE:
1/4 cup apricot jam
1 tablespoon brandy


Instructions:

1. Preheat oven to 350°F. Butter and flour a 9-inch round cake pan.

2. In the bowl of your electric mixer, beat the butter on medium speed until creamy. Add the sugar and beat until light and fluffy. Add the egg and vanilla extract and beat until well mixed.

3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add to the butter mixture and beat on low speed until just blended.

4. Stir in the raisins, currants, walnuts, almonds, ginger, brandy, apple cider, and 1 tablespoon of water. Mix well.

5. Spoon the batter into the prepared cake pan and spread evenly. Bake for about 45 minutes, or until a toothpick or cake tester inserted into the center comes out clean.

6. Remove from oven and let cool for 10 minutes before turning out onto a wire rack to cool completely.

7. To make the glaze, heat the apricot jam in a small saucepan over low heat until melted. Stir in the brandy.

8. Drizzle the glaze over the top of the cooled cake. Let the cake stand for a few hours before serving. Enjoy!
