Turkish Lentil & Rice Salad


It's all about the lentils! Healthy, tasty, very quick to put together and high in protein. Not only that, but let's give parsley a little applause here... in just ten sprigs of parsley, 205% of your vitamin k needs are provided for the day. This helps keep your bones strong, helps the blood clot when you cut yourself and a whole bunch of other stuff! Cool hey?

Ingredients:

  • 1 cup green lentils, cooked and drained
  • ½ cup rice, cooked and cooled
  • 1 large onion
  • 4 tbsp olive oil
  • 1 big carrot, grated
  • 2-3 green onions, chopped
  • ½ -1 cup fresh parsley, chopped
  • ½ cup fresh mint, chopped
  • 1 lemon's juice
  • 1 tsp salt to taste
  • 1 tsp black pepper
  • ½ cup corn (optional)

Method:
After cooking your rice and green lentils separately, let them cool down to room temperature. 

Meanwhile, take the olive oil in a skillet and sauté onions for about five minutes over a medium heat.
Stir in the grated carrots and saute for an additional six to eight minutes. Let the mixture cool for a while.

Finally, combine sautéed onions and carrots with cooked green lentils and rice. Add all of the remaining ingredients and mix til you have a colourful dish of pure and utter joy!
